An authentic Neapolitan pizza should, according to rules created by the organization Associazione Verace Pizza Napoletano, be round with a diameter of 30-35 centimeters, have high edges and be soft and elastic.
The dough consisting of wheat flour, yeast, salt and water should rise in different stages and then be formed flat and round by hand, without any help from rolling pins or mechanical presses.
The pizza should be cooked in a wood-fired oven.
